• 4 rashers streaky bacon
• 4 slices thick white or wholemeal bread
• 60 g smooth or crunchy peanut butter
• 1 medium ripe banana

How to Make It
• Put the bacon in a cold frying pan. Turn the heat to medium and cook for 4-5 minutes, turning once, until it is browned and crisp around the edges. You should hear a gentle sizzle, not fierce spitting. Transfer the bacon to a plate lined with paper towel.
• While the bacon cooks, peel the banana and slice it into rounds about 5 mm thick. Keep the slices fairly even so the filling warms at the same rate. Cut or break each bacon rasher in half once it has cooled enough to handle.
• Spread 15 g of peanut butter over one side of each bread slice. Divide the banana between two slices, keeping it inside the edges of the bread. Add two bacon rashers to each sandwich. Drizzle over the honey, if using, and add a tiny pinch of salt if you like a stronger sweet-and-salty hit.
• Place the remaining bread slices on top, peanut-butter side down. Press gently so the filling settles, but do not squash the banana into a paste.
• Wipe out any burnt bacon bits from the pan, then return it to medium-low heat. Put in the sandwiches and cook for 3-4 minutes on the first side. The bread should be deep golden brown and feel crisp when you tap it with a spatula.
• Carefully turn the sandwiches and cook for another 3-4 minutes. If the bread is colouring too quickly, lower the heat. The peanut butter should be warm and soft, and the banana should be heated through without leaking out the sides.
• Transfer the toasties to a board and leave them for 1-2 minutes before cutting. This short rest lets the hot filling settle, so it is less likely to rush out when you slice.
Note: Use a sharp knife and cut each toastie diagonally. Check the centre before serving: it should be warm, creamy and packed with banana, while the crust should make a light crisp sound when pressed.
Serve immediately while the bacon is still crisp. A mug of tea, coffee or cold milk works nicely alongside, especially if you have used honey or very ripe banana.
